What is beef tripe and what are its benefits?

The rumen is the first and largest compartment of the four-chambered stomach in mammals of the suborder Ruminantia. It resembles a dense sac and consists of several layers: an upper, serous layer (made of connective tissue), a middle, muscular layer, and an inner, mucous layer densely covered with long, fur-like papillae. The inner surface can range in color from light brown to dark gray.
